Kitchen operations head/supervisor oversees all operations in the central kitchen. He/she ensures production targets, portion sizing, product quality and specifications are reached. He/she also manages the production schedule and monitors the overall production output levels. He/she formulates new food production standards and Standard Operating Procedures (SOPs). He/she monitors quality assurance on an overall level through conducting spot checks, investigates production/quality issues in the kitchen and recommends solutions. He/she monitors and recommends ways to reduce waste production.
