Chooses, combines and prepares ingredients using a range of knife skills and cooking techniques to make Chinese dishes.
Main tasks
- Recognising the qualities and origins of ingredients, choosing them to suit the dish and flavour, and removing inedible parts
- Cleaning and preparing meat, poultry and seafood, breaking down cuts, boning whole animals and soaking dried foods
- Cutting ingredients by slicing, chopping, scoring, mincing and other knife techniques to suit the dish and the ingredient
- Part cooking ingredients by blanching, flash frying in oil, steaming, braising in soy sauce and similar methods
- Mixing starch glazes, coatings and batters and coating ingredients
- Combining main ingredients and accompaniments
- Choosing seasonings and seasoning methods to suit the dish and ingredients, judging amounts, timing and order to get the flavour and aroma right
- Cooking prepared ingredients into hot dishes
- Arranging and mixing cooked or raw ingredients into cold dishes of many shapes
- Decorating with food carving, sugar work and dough sculpture, choosing tableware and plating
- Costing and pricing dishes, developing new dishes, managing the kitchen and leading banquet cooking
