Operates dairy equipment to turn raw milk or standardised ingredients into all kinds of dairy products.
Main tasks
- Receiving, storing and cooling raw milk and standardising it to recipe
- Operating equipment to homogenise and deaerate milk
- Operating equipment to pasteurise or sterilise raw milk or standardised ingredients
- Operating fermentation equipment to make yoghurt or adding cultures, enzymes and acids to curdle pasteurised milk
- Pressing curd into shape with cheese equipment and deciding whether to mature it
- Operating equipment to separate casein and whey from skim milk
- Ripening pasteurised cream physically and biochemically
- Processing acid or rennet whey and their concentrates
- Concentrating sterilised milk, standardised ingredients or whey in single, double or multiple effect evaporators
- Forcing lactose in condensed milk to crystallise with batch or continuous crystallising equipment
- Drying condensed milk, casein, sodium caseinate and crystallised lactose
- Packing liquid and solid dairy products with special equipment
- Cleaning equipment and pipes
