Also called: Huangjiu Culture Worker, Wheat Qu Maker, Huangjiu Fermentation and Pressing Worker, Wine Pasteuriser, Huangjiu Blender, Huangjiu Bottler
Brews huangjiu (Chinese yellow wine) from grain, using wine starter, wheat qu and other microbes for saccharification and fermentation.
Main tasks
- Isolating and screening microbes from wine starter
- Isolating, screening, reviving, keeping and growing the saccharifying cultures used for huangjiu
- Pretreating grain and other raw materials with screening and soaking equipment
- Steaming material in cookers and spreading cooked rice to cool
- Moving cooked material into primary and secondary fermenters by machine or by hand
- Separating cloudy wine from solids after secondary fermentation with presses, filters and other equipment
- Clarifying, fine filtering and sterilising the separated wine
- Filling heat sterilised clear wine into jars, sealing and ageing it
- Blending part finished or finished huangjiu to recipe
- Cleaning containers and operating equipment to bottle, seal, label and box
