Food and beverage operations manager plans, organises, coordinates and directs food and beverage (F&B) operations, including those related to central kitchen. He/she creates and maintains Standard Operations Procedures (SOP) for the F&B business, including F&B administration and food safety and hygiene practices. He/she maintains brand standards and establishes the brand concept, management and strategy.
Main tasks
- Planning menus in consultation with chefs and cooks
- Planning and organising special functions
- Arranging the purchasing and pricing of goods according to budget
- Ensuring dining, kitchen and food storage facilities comply with health regulations and are clean, functional and of suitable appearance
- Conferring with customers to assess their satisfaction with meals and service
- Selecting, setting staff work schedules, training and supervising waiting and kitchen staff
- Negotiating arrangements with clients and suppliers
