Judges the colour, aroma, taste and texture of soy sauce, pastes, vinegar and other condiments by the senses.

- Taking and preparing samples and getting tasting rooms, special facilities and dishes ready
- Judging the sensory quality of raw materials and condiments in production
- Grading condiments entering storage and judging their colour, aroma, taste and texture
- Analysing tasting results and suggesting changes to ingredients, process choices and process improvements
