Official Chinese title (2022 occupational classification): 食醋制作工
Brews vinegar from starchy materials, bran, rice husks and water with vinegar brewing equipment using traditional solid state brewing.
Main tasks
- Removing impurities and washing raw materials with sorters, washers and other equipment
- Grinding raw materials with crushers, grinders and steel mills and moistening them
- Steaming material in cookers and other equipment
- Making saccharifying koji from starchy materials, bran and rice husks on koji beds and bamboo trays
- Growing yeast starter in culture tanks and seed tanks
- Growing vinegar starter in culture vats and seed tanks
- Mixing cooled steamed material with koji and yeast starter in tanks, pits or vats for saccharification and alcohol fermentation
- Adding yeast to the mash and using acetic acid bacteria to ferment it into vinegar
- Draining vinegar from the fermented mash in draining tanks
- Heating and sterilising with tube heat exchangers and other equipment
- Blending vinegar with weighing and blending equipment
- Packing vinegar by machine or storing it in tanks
- Maintaining equipment
