How to become a Sommelier
Official Chinese title (2022 occupational classification): 侍酒师
Spreads wine culture in restaurants, designs wine lists, pairs wines with dishes, manages the cellar and trains staff in wine knowledge.
Main tasks
- Writing the wine list based on region, winery, classification, vintage, character, price and the restaurant's style of food, costing and pricing wines and advising on buying
- Assessing wines by tasting and observation, directing how wines are stored in the cellar by grade, type and region, and managing cellar temperature and humidity
- Explaining the basics, character and quality of each wine on the list to guests
- Telling the story, history, culture and quality of each wine's brand, showing and recommending wines, and pairing them with dishes and advising as guests wish
- Presenting wines and asking guests to confirm region, winery, vintage and quality, and preparing the right glassware and tools for the type of wine
- Decanting wine with a corkscrew and decanter, judging decanting time by vintage, quality and the decanter's material and shape, and serving wine at the table
- Planning wine service training and training and guiding staff in wine knowledge and culture
