How to become one

No particular education or qualifications are needed to start, but basic knowledge of food is an advantage. Each type of bread uses different ingredient ratios and methods, so learning to make bread takes a good deal of hands-on experience. Most people build up experience working in bread production. In large, mechanised bakery factories, the stages of bread making are sometimes split between different workers. In a typical bakery factory, new starters handle preparation such as weighing ingredients. Once they know the types of bread and how production flows, they move on to shaping and baking and learn to run the machines. With more experience they take on dough mixing, the stage most important to the bread's quality. The time varies by company, but after about six or seven years, depending on aptitude and ability, they may be promoted to a supervisory role such as team leader or chief. People who have graduated from a designated course at a senmon gakko (vocational college), or who have at least two years of work experience, can sit the bread making exam in the ginou kentei (national trade skills test) run by the Ministry of Health, Labour and Welfare, which helps with career progress. Some people open their own bakery, and shops with a small oven selling freshly baked bread sometimes become popular. To open your own shop you also need to qualify as a food hygiene supervisor.
