How to become a Ham and Sausage Maker

Cuts and trims raw meat, then cures and smokes it to make ham, sausages and bacon.
Main tasks
- Cutting carcasses into cuts with a knife, removing bones and trimming off fat and sinew
- Curing meat by soaking it in pickling brine or injecting brine automatically with an injector
- Operating machines that stuff the meat into casings after it has rested in a cold room for a set time
- Drying part-made hams and smoking them in a smokehouse
- Boiling boneless and loin hams after smoking and cooling them in a cool, dark place
- Mincing cured meat in a chopper, adding spices and seasonings and mixing it in a silent cutter
- Operating a stuffer to fill casings with the prepared meat
- Drying, smoking and boiling products to finish them
- Testing product quality with special tools and machines
- Checking finished products by eye or machine for faults or foreign objects
- Labelling and packing products
- Buying meat and other raw materials and managing stock
- Maintaining, checking and repairing equipment and machinery
- Developing new products
